Eating Healthy On a Budget
Buying fruits and vegetables will not shrink your grocery budget. In fact, it may increase it if you do not know what to look for when you are shopping.

The first rule when shopping on a budget is to buy produce that can give you the most nutritional bang for your buck. I like asparagus, but at $3.99 a pound, I am unable to justify this purchase on my $100.00 a week budget. However, kale is only $1.33 a pound and you can purchase a huge bag of it for under two dollars. This can last you an entire week!
A lot of people are reluctant to eat kale or any vegetable that is not your basic salad ingredient. Believe me, I used to purchase a bag of kale and it would sit in the back of my fridge for two weeks before I finally threw it away when it started to rot. As my grocery budget shrunk, I took the plunge and found a recipe online for kale. My first attempt at making this dish was not exactly pretty. The kale was overcooked and parts were blackened because I had the heat on too high. There was not enough seasoning (although I did follow the recipe exactly). My husband managed to eat it, but I could tell that it was something he hoped I would never cook again.
Normally, this would have ended my foray into the world of greens, but never one to give up, I decided to try again. This time I took the basics of the recipe and decided to do some experimentation. After all it couldn't come
See my recipe for kale below:
Take 2 - 3 giant kale leaves.
Tear off from stalk.
Wash and pat dry.
Put 1-2 tablespoons of olive oil in a large pot or skillet.
Add the kale turn heat on low.
Add apple cider vinegar 2-3 tablespoons.
Add onion powder, garlic powder, black pepper, and salt (this is all to taste).
*I don't measure I just go by taste and everyone likes more or lesS of any ingredient.
You only wilt the kale on the cook top for 2 minutes.
Just enough to warm it up while you stir and mix the ingredients.
I don't like it overcooked and to wilted.
I like the leaves to remain fluffy.
You can add black olives to this recipe, onion, chopped garlic and red cabbage.
It tastes like a warm salad and is very yummy. Although when I mentioned this fact to my husband, his response was, "I don't like my salad warm." Of course he does like this dish!
